Founders Robert Hicks and Helen Chalmers began planning The Highland Liquor Co in 2014 and tested 96 combinations to reach the final recipe for Seven Crofts Gin, which is distilled in 100L stills by Head Distiller Ben Thompson who joined the team in 2018. Seven Crofts Handcrafted Dry Gin was created with botanicals such as pink pepper and coriander for a slightly spicy, yet citrus finish.

Serve in a straight glass with lots of ice, a good quality tonic (1 part gin to 2 parts tonic) and garnished with a slice of orange.
