Orkney is where the North sea meets the Atlantic Ocean and salt-laden winds sculpt the coastines, where peat carpets mile after mile of moorland and vast skies stretch endlessly above.
At Highland Park, they smoke the barley over peat which is cut responsibly and sparingly from Hobbister Moor. Rich in heather, it burns slowly in the kiln, creating the floral aromas that give Highland Park its uniquely light, smoky sweetness.

TASTING NOTES
NOSE
Floral honey and underripe pears, pithy orange, just a hint of Sweetarts candy, spiced fruitcake, subtle peat and smoke.
TASTE
More floral honey and tart citrus, spiced fruitcake is there as well, and it’s joined by slightly bolder, earthier peat and smoke notes.
FINISH
Medium-long. Tart citrus and cinnamon and sugar fade early leaving that tannic oak, baking spice and earthy, heathery peat and wispy smoke to linger.
