Knockdhu Distillery, established in 1894, is arguably one of the most captivating distilleries in the Scottish Highlands. Nestled amidst an abundance of natural resources that are perfectly suited for whisky production, the distillery stands in the shadow of Knock Hill, home to springs of crystal-clear water. It also lies on the doorstep of a region renowned for its rich barley and peat deposits.
Historically, peat was embraced as a natural fuel to ignite the still and dry the barley for the distillation of whisky. The smoke produced by peat contains compounds known as phenols, and it is through the phenol content that a whisky’s ‘peatiness’ can be quantified. This phenol content is expressed in parts per million (PPM), and to ensure a consistently high phenol content, Peatheart uses barley specifically selected by the Master Blender, which is malted to a phenol content of 34 PPM. However, phenols are lost during the whisky-making process at various stages, resulting in a final phenol content that is always lower than the PPM of the malted barley. This particular batch of Peatheart has a phenol content of 13.3 PPM.
