TASTING NOTES
NOSE
Initial aromas are of homemade baking: vanilla extract, melted marshmallow, pear and almond tart, with a butter shortbread crust, and sugar doughnuts. This evolves into strong black tea and blackcurrant and apple cordial.
TASTE
Slightly tart on the palate with grapefruit juice and under-ripe tamarind. Some spiciness kicks in with grated horseradish and freshly-picked spearmint. Then appears a medley of lemongrass, gooseberry jam and thick raspberry syrup.
FINISH
The finish presents the silky-but-savoury quality of focaccia, sprinkled with pine nuts and watercress. The lasting impression is both sweet and bitter at the same time – stewed rhubarb and a smattering of brown sugar.
